10 Mediterranean Recipes Ready in 30 Minutes or Less
Busy weeknights are no excuse for skipping healthy food. These 10 quick Mediterranean recipes come together in 30 minutes or less and taste like you spent all day in the kitchen.
Fast Mediterranean Cooking Is Not a Compromise
One of the biggest myths about healthy eating is that it takes hours. Mediterranean cuisine, at its core, is peasant food — built on simple techniques, bold flavours, and ingredients that need very little intervention. The tomato is better raw or quickly roasted. The fish is best grilled simply with lemon and olive oil. The chickpea is already cooked from the tin. Once you understand that Mediterranean cooking respects ingredients rather than labours over them, 30-minute meals become effortless.
Here are 10 recipes that prove the point.

6. Turkish Eggs (Çilbir) (15 minutes)

Serve with crusty bread.
7. Chickpea and Spinach Stew (25 minutes)
Sauté a diced onion in olive oil, add two crushed garlic cloves, a teaspoon of cumin, and half a teaspoon of turmeric. Add two tins of drained chickpeas and enough vegetable stock to just cover. 8. Grilled Salmon with Herbed Tzatziki (20 minutes)
Season salmon fillets with olive oil, lemon zest, garlic, and dried oregano. Grill or pan-fry four minutes each side. While the fish cooks, combine Greek yogurt with grated cucumber (squeezed dry), fresh dill, garlic, and lemon juice. Serve the salmon over the tzatziki with a simple green salad.
9. White Bean and Tomato Bruschetta (15 minutes)
